Golden Buttermilk Drop Biscuits
Ingredients
All-purpose flour: 2 cups, spooned into the measuring cup and leveled.
Baking powder: 1 tablespoon to help the biscuits rise.
Baking soda: ¼ teaspoon to work with the buttermilk.
Salt: ¾ teaspoon for a balanced, savory flavor.
Granulated sugar: 1 teaspoon for a little sweetness and browning.
Unsalted butter: ½ cup (1 stick), melted and cooled slightly.
Cold buttermilk: 1 cup, straight from the refrigerator.
Optional topping: 2 tablespoons melted butter for brushing after baking.
Instructions
Preheat your oven to 425°F (220°C). Position a rack in the middle of the oven.
Line a large baking sheet with parchment paper to prevent sticking.
Add the flour, baking powder, baking soda, salt, and sugar to a large mixing bowl.
Whisk thoroughly so the leavening ingredients are evenly distributed.
Pour the cold buttermilk into a separate bowl or large measuring cup.
Slowly stir the slightly cooled melted butter into the cold buttermilk.
Small butter clumps should form. These help create tender biscuits.
Pour the buttermilk mixture into the bowl of dry ingredients.
Gently fold everything together with a spatula until no dry flour remains.
Stop mixing as soon as the dough comes together. It should look thick, sticky, and slightly lumpy.
Divide the dough into eight generous portions using a scoop or two spoons.
Drop the portions onto the prepared baking sheet, leaving about 2 inches between them.
Keep the tops rough and rounded for the rustic appearance shown in the photo.
Bake for 15–20 minutes, until the tops are golden brown and the centers are set.
If using the optional topping, brush the hot biscuits lightly with melted butter.
Let the biscuits rest on the baking sheet for 5 minutes before serving warm.
Variation
Cheddar biscuits: Fold ¾ cup shredded sharp cheddar into the dry ingredients before adding the liquid.
Garlic biscuits: Add ½ teaspoon garlic powder to the flour mixture.
Herb biscuits: Stir in 1 tablespoon chopped chives or parsley for a fresh, savory flavor.
Pepper biscuits: Add ½ teaspoon freshly ground black pepper for a little warmth.
Slightly sweeter biscuits: Increase the sugar to 2 tablespoons and serve with jam or honey.
Storage
Let the biscuits cool completely on a wire rack before storing to prevent trapped moisture.
Keep plain biscuits in an airtight container at room temperature for up to 2 days.
For longer storage, refrigerate them in a sealed container for up to 5 days.
Freeze cooled biscuits individually, then transfer them to a freezer bag for up to 3 months.
Reheat thawed biscuits at 350°F (175°C) for 8–10 minutes, loosely covered with foil.
Warm frozen biscuits at 350°F (175°C) for approximately 15–20 minutes, until heated through.
