Cheesy Beef Taco Tostada Pizzas
Ingredients
Use 8 small corn tostada shells as the crispy base.
You’ll need 1 pound lean ground beef for the topping.
Finely dice ½ small yellow onion.
Measure 1 tablespoon chili powder and 1 teaspoon ground cumin.
Add ½ teaspoon each garlic powder and smoked paprika.
Include ½ teaspoon salt, ¼ teaspoon black pepper, and ⅓ cup water.
Measure 1 cup refried beans, warmed for easier spreading.
Use ½ cup thick taco sauce or enchilada sauce.
Shred 2 cups Colby Jack cheese, or combine equal amounts of cheddar and Monterey Jack.
Prepare 1 cup diced tomatoes and ¼ cup thinly sliced green onions for finishing.
Instructions
Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment rated for that temperature.
Place a large skillet over medium-high heat. Add the ground beef and diced onion.
Cook for 7–10 minutes, breaking the beef into small crumbles and stirring frequently.
Cook the ground beef to 160°F (71°C), then drain any excess grease.
Stir in the chili powder, cumin, garlic powder, smoked paprika, salt, and pepper.
Pour in the water and simmer for 3–5 minutes, until the mixture is moist without excess liquid.
Arrange the tostada shells in a single layer on the baking sheet. Use two sheets if necessary.
Spread approximately 2 tablespoons of warmed refried beans over each shell.
Spoon about 1 tablespoon of taco sauce over each bean layer.
Divide the seasoned beef evenly among the tostadas, spreading it close to the edges.
Sprinkle each tostada with approximately ¼ cup shredded cheese.
Bake for 5–8 minutes, until the cheese melts and the toppings are hot. Watch closely to prevent burning.
Remove the baking sheet from the oven and let the tostadas rest for 1–2 minutes.
Scatter the diced tomatoes and sliced green onions over the melted cheese.
Serve immediately while the shells are crisp. Optional sour cream or hot sauce can be added at the table.
Variation
Chicken Tostada Pizzas: Replace the ground beef with cooked shredded chicken, warming it with the seasonings and water.
Bean Tostada Pizzas: Replace the beef with 1½ cups drained black beans, lightly mashed and seasoned.
Spicy Tostada Pizzas: Add sliced jalapeños before baking or finish with your favorite hot sauce.
Smoky Tostada Pizzas: Replace half the Colby Jack with smoked cheddar for a deeper smoky flavor.
Extra Vegetable Tostadas: Add sautéed bell peppers or well-drained corn, keeping the topping layer light.
Storage
For the best texture, store the beef, beans, sauce, cheese, and fresh toppings separately. Assemble shortly before serving.
Refrigerate cooked beef and assembled leftovers in airtight containers within 2 hours. Use within 3–4 days.
Keep unused tostada shells sealed at room temperature according to the package directions.
Remove fresh toppings before reheating assembled tostadas. Heat at 350°F (175°C) until the filling reaches 165°F (74°C), then add fresh toppings.
Freeze the cooled beef filling for up to 3 months. Thaw overnight in the refrigerator before reheating and assembling on fresh shells.
