Southern 3-Ingredient Cheesy Beef Squares
Ingredients
Ground beef: 1 pound. Lean ground beef helps keep the filling from becoming too greasy.
Shredded cheddar cheese: 2 cups, divided between two layers.
Refrigerated crescent dough sheets: Two 8-ounce cans, using one for the bottom and one for the top.
If using perforated crescent roll dough, pinch the seams together to form solid sheets.
Freshly shredded cheddar melts smoothly, while packaged shredded cheddar offers a convenient shortcut.
Instructions
Preheat the oven to 375°F (190°C), or 350°F (175°C) when using a glass baking dish.
Set out a 9-by-13-inch baking dish. Keep the crescent dough refrigerated while preparing the filling.
Heat a large skillet over medium-high heat, then add the ground beef.
Break the beef into small crumbles with a wooden spoon or spatula as it cooks.
Cook until the beef is browned and reaches 160°F (71°C).
Drain the cooked beef thoroughly. Excess grease can soak into the bottom crust.
Let the beef cool slightly while you prepare the dough.
Open the first can of crescent dough and carefully unroll it into the baking dish.
Gently stretch and press the dough across the bottom, sealing any holes or seams.
Bake the bottom crust for 8–10 minutes, until lightly golden. At the lower temperature, it may need a little longer.
Remove the dish from the oven and sprinkle 1 cup of cheddar evenly over the warm crust.
Spread the drained ground beef over the cheese, keeping the filling evenly distributed.
Sprinkle the remaining 1 cup of cheddar over the beef.
Unroll the second dough sheet and gently place it over the filling.
Carefully stretch the dough toward the edges without tearing it, then pinch any seams closed.
Bake for 18–25 minutes, checking that the top is golden and the dough is cooked through. Allow extra time if needed at the lower oven temperature.
If the top browns before the dough finishes cooking, cover it loosely with aluminum foil.
Remove the baking dish from the oven and let the squares rest for 10 minutes.
Cut into 9 large squares or 12 smaller portions. Use a sharp knife to slice through both crusts.
Lift out each square with a spatula and serve warm while the cheese is melted.
Variation
Different cheese: Replace the cheddar with Monterey Jack, Colby Jack, or a combination, keeping the total at 2 cups.
Ground turkey: Substitute 1 pound ground turkey for the beef and cook it to 165°F (74°C) before assembling.
Spicy version: Use pepper Jack instead of cheddar for a little heat without increasing the ingredient count.
Optional onion: Cook ½ cup finely diced onion with the beef. This makes it a four-ingredient version.
Optional seasoning: Add garlic powder, black pepper, or your favorite seasoning to the beef. These additions are outside the original three ingredients.
Storage
Refrigerate leftovers within 2 hours of baking. Divide them into shallow containers so they cool quickly.
Store the squares in an airtight container in the refrigerator for 3–4 days.
For longer storage, wrap individual chilled squares and place them in a freezer bag. Freeze for up to 2 months for best quality.
Thaw frozen squares overnight in the refrigerator before reheating.
Reheat at 350°F (175°C), loosely covered with foil, until the center reaches 165°F (74°C). Uncover near the end to help crisp the top.
