Butterscotch Shortbread Cookies
These Butterscotch Shortbread Cookies are a delicious combination of rich buttery shortbread and sweet, caramel-like butterscotch. They have crisp, delicate edges, a tender center, and plenty of little butterscotch chips throughout every bite.
To make these cookies, you will need 1 cup (225 g) of unsalted butter, softened to room temperature. Using softened butter is important because it allows the ingredients to blend smoothly and gives the cookies their classic shortbread texture.
You will also need ½ cup (100 g) of granulated sugar and ½ cup (100 g) of packed light brown sugar. The combination of both sugars adds sweetness while the brown sugar contributes a deeper caramel flavor that works beautifully with the butterscotch.
For flavor, add 1 teaspoon of vanilla extract. Vanilla enhances the buttery flavor and balances the sweetness of the brown sugar and butterscotch chips.
The dry ingredients include 2 ¼ cups (280 g) of all-purpose flour and ½ teaspoon of salt. You can also add 2 tablespoons of cornstarch if you want an especially tender, delicate shortbread texture.
The star ingredient is 1 cup (170 g) of butterscotch chips. These little pieces melt slightly during baking and create pockets of sweet, buttery caramel flavor throughout the cookies.
Begin by preheating your oven to 175°C (350°F). Line one or two baking sheets with parchment paper so the cookies do not stick and are easy to remove after baking.
Place the softened butter, granulated sugar, and brown sugar in a large mixing bowl. Beat everything together until the mixture becomes smooth, creamy, and slightly fluffy.
Add the vanilla extract and mix again until it is evenly incorporated. Scrape down the sides of the bowl if necessary so that all the ingredients are thoroughly combined.
In a separate bowl, whisk together the flour, salt, and cornstarch. Combining the dry ingredients separately helps distribute the salt and cornstarch evenly throughout the dough.
Gradually add the dry ingredients to the butter mixture. Mix gently and stop as soon as the ingredients come together into a soft dough. Avoid overmixing because this can make the cookies less tender.
Add the butterscotch chips and gently fold them into the dough using a spatula or wooden spoon. Try to distribute the chips evenly so that every cookie gets plenty of butterscotch flavor.
For an even better texture, cover the dough and refrigerate it for about 30 minutes. Chilling helps the butter firm up and can prevent the cookies from spreading too much while they bake.
Once chilled, scoop out small portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving enough space between each cookie.
Gently flatten each dough ball with your fingers or the bottom of a glass. Shortbread does not need to be very thin, so aim for cookies that are still slightly thick.
Bake the cookies for approximately 10 to 14 minutes. The edges should become lightly golden while the centers remain relatively pale. Avoid overbaking because shortbread is best when it remains tender.
Remove the baking sheet from the oven and allow the cookies to cool for about 5 minutes. They will still be soft immediately after baking but will become firmer as they cool.
Transfer the cookies carefully to a wire rack and allow them to cool completely. Once cooled, the cookies should have a delicate, buttery texture with crisp edges and a satisfying butterscotch flavor.
For an extra-special finish, you can sprinkle a tiny amount of flaky sea salt over the cookies while they are still slightly warm. The contrast between the sweet butterscotch and subtle saltiness makes the flavor even more pronounced.
Store the cooled cookies in an airtight container at room temperature for several days. They are wonderful with coffee, tea, hot chocolate, or simply enjoyed on their own as a buttery homemade treat.
