Prepare the crust. Preheat your oven to 325°F (165°C). Line the bottom of a 9-inch springform pan with parchment paper and lightly grease the sides.

Place the digestive biscuits or graham crackers in a food processor and pulse until they become fine crumbs. You can also crush them inside a sealed bag using a rolling pin.

Transfer 1½ cups of biscuit crumbs to a mixing bowl. Add ¼ cup granulated sugar and, if desired, ½ teaspoon ground cinnamon for a subtle warm flavor.

Pour in ½ cup melted unsalted butter and mix thoroughly until all the crumbs are evenly coated and the mixture resembles wet sand.

Press the crumb mixture firmly into the bottom of the prepared springform pan. Use the back of a spoon or the bottom of a glass to create an even, compact layer.

Bake the crust for approximately 8–10 minutes, then remove it from the oven and allow it to cool slightly while you prepare the cheesecake filling.

Prepare the filling. Make sure the three 8-ounce packages of cream cheese are completely softened to room temperature. This will help create a smooth, creamy cheesecake without lumps.

Place the softened cream cheese in a large mixing bowl. Beat it on medium-low speed until smooth and creamy, avoiding excessive whipping.

Gradually add 1 cup granulated sugar while continuing to mix. Scrape down the sides of the bowl occasionally so everything combines evenly.

Add 1 teaspoon vanilla extract and mix until incorporated. The vanilla enhances the creamy flavor and complements the caramel beautifully.

Add the three large eggs one at a time, mixing gently after each addition. Do not overmix once the eggs have been incorporated, as excessive air can cause the cheesecake to crack.

Add ½ cup sour cream and ½ cup heavy cream. Mix gently until the filling is completely smooth and silky.

Slowly fold or mix in 1 cup caramel sauce until it is evenly distributed throughout the cheesecake batter. Reserve some caramel sauce for decorating the finished cheesecake.

Pour the caramel cheesecake filling over the cooled crust. Gently tap the pan against the counter a few times to release large air bubbles from the batter.

Place the cheesecake in the preheated oven and bake for approximately 55–70 minutes, or until the edges are set while the center still has a slight gentle wobble.

Turn off the oven and leave the cheesecake inside with the door slightly open for about 30–60 minutes. This gradual cooling helps minimize sudden temperature changes.

Remove the cheesecake from the oven and allow it to cool completely at room temperature. Once cooled, cover it and refrigerate for at least 6 hours, preferably overnight.

When ready to serve, carefully remove the sides of the springform pan. Transfer the cheesecake to a serving plate and drizzle the reserved caramel sauce generously over the top.

For an extra indulgent presentation, add a little whipped cream around the edges or sprinkle the top with crushed digestive biscuits. You can also add a small pinch of sea salt to the caramel for a salted-caramel variation.

Slice the cheesecake with a warm, clean knife for neat portions. Serve chilled and enjoy the rich combination of buttery biscuit crust, creamy cheesecake and luxurious caramel in every bite.
