Yields: 4 servings
Prep time: 10 minutes
Cook time: 20 minutes
Ingredients
For the Pasta:
12 oz (340g) spaghetti
Salt (for pasta water)
For the Sauce:
2 tablespoons olive oil
1 tablespoon unsalted butter
1 lb (450g) cremini mushrooms, sliced
4 cloves garlic, minced
1 cup heavy cream (or half-and-half for a lighter version)
1 cup grated Parmesan cheese, plus more for serving
5 oz (140g) fresh baby spinach
½ teaspoon salt, or to taste
¼ teaspoon black pepper
¼ teaspoon red pepper flakes (optional, for a subtle kick)
1 tablespoon fresh lemon juice (optional, but recommended to brighten the flavor)
Preparation
1. Cook the Pasta:
Begin by bringing a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions, typically around 9-11 minutes for al dente pasta. Once the pasta is done, drain it, reserving about 1 cup of pasta water for the sauce. Set the pasta aside.
2. Prepare the Sauce:
In a large skillet, heat the olive oil and butter over medium heat. Once the butter has melted, add the sliced cremini mushrooms. Sauté the mushrooms for about 5-7 minutes, stirring occasionally, until they are golden brown and tender.
Add the minced garlic to the pan and cook for another minute, until fragrant. Be careful not to burn the garlic.
3. Make the Creamy Sauce:
Reduce the heat to low and pour in the heavy cream (or half-and-half for a lighter version). Stir the mixture together and let it simmer for 2-3 minutes, allowing the sauce to thicken slightly.
Add the grated Parmesan cheese to the sauce, stirring until it melts completely and the sauce becomes creamy. Season with salt, black pepper, and red pepper flakes (if using) to taste.
4. Add the Spinach:
Toss in the fresh baby spinach and cook for 2-3 minutes, stirring, until the spinach wilts and incorporates into the sauce.
5. Combine Pasta and Sauce:
Add the cooked spaghetti to the skillet, tossing it in the creamy sauce to coat the pasta evenly. If the sauce seems too thick, add a splash of the reserved pasta water to loosen it to your desired consistency. Stir in the fresh lemon juice (optional), which will add a burst of brightness and enhance the overall flavor.
6. Serve:
Divide the pasta among four plates, garnishing with extra grated Parmesan cheese. Serve immediately, and enjoy this creamy, garlicky, mushroom-filled comfort food.
Tips & Variations:
For Extra Protein: Add grilled chicken, shrimp, or even tofu for a more filling meal.
Vegan Option: Use plant-based butter and a dairy-free cream alternative like coconut cream or oat cream. Replace the Parmesan with a vegan cheese or nutritional yeast for that cheesy flavor.
Mushroom Variety: If you can’t find cremini mushrooms, feel free to substitute with white button mushrooms or even a mix of wild mushrooms for a more earthy flavor.
Make It Spicy: Increase the red pepper flakes for more heat, or add a splash of hot sauce for an extra kick.
Herb Options: Add fresh basil, thyme, or parsley for a pop of color and fresh flavor.
Why You’ll Love This Pasta:
Quick & Easy: Ready in just 30 minutes, this pasta is perfect for busy weeknights.
Flavor-Packed: The combination of garlic, mushrooms, and Parmesan in a creamy sauce creates an irresistible flavor.
Comforting Yet Elegant: It’s rich and indulgent, but still light enough to enjoy any day of the week.
