Chocolate Peanut Butter Rice Krispy Cups

Ingredients

These easy no-bake cups combine crunchy rice cereal, creamy peanut butter, and a smooth chocolate topping. This recipe makes 12 standard muffin-size cups.

Measure 3 cups crispy rice cereal into a large mixing bowl.

You’ll need 1 cup creamy peanut butter. Use a regular, no-stir variety for a consistent texture.

Measure ⅓ cup honey to sweeten the mixture and help bind the cereal.

Add 2 tablespoons unsalted butter for a softer bite.

Prepare 1 teaspoon vanilla extract and ⅛ teaspoon salt. Omit the salt if your peanut butter is already quite salty.

For the topping, use 1½ cups semisweet or milk chocolate chips.

Optional: add 1 teaspoon coconut oil to the chocolate for a slightly softer topping.

Instructions

Line a standard 12-cup muffin pan with paper liners, or use a silicone muffin pan.

Place the peanut butter, honey, and butter in a medium microwave-safe bowl.

Microwave in 20-second intervals, stirring after each, until the butter melts and the mixture becomes smooth. Avoid overheating.

Alternatively, warm these ingredients in a small saucepan over low heat, stirring constantly.

Remove from the heat and stir in the vanilla and salt.

Pour the warm peanut butter mixture over the crispy rice cereal.

Fold gently with a spatula until all the cereal is evenly coated, taking care not to crush it.

Divide the mixture evenly among the 12 muffin cups, using approximately ⅓ cup per cup.

Press firmly into an even layer using the back of a lightly greased spoon.

Refrigerate the filled pan for 15 minutes while you prepare the topping.

Place the chocolate chips and optional coconut oil in a clean, dry microwave-safe bowl.

Microwave in 20-second intervals, stirring thoroughly between each, until smooth. Stop heating when only a few small pieces remain, then stir until melted.

Spoon the melted chocolate evenly over the chilled cereal bases, approximately 2 tablespoons per cup.

Spread the chocolate gently to the edges with the back of a spoon.

Tap the pan lightly on the counter to help level the topping.

Refrigerate for 45–60 minutes, or until the chocolate is firm and the bases hold together.

Remove the cups from the pan and peel away the liners. Let stand for 5–10 minutes before serving.

Variation

Dark Chocolate: Replace the milk chocolate with dark chocolate chips for a less sweet topping.

Extra Peanut Butter: Stir 1 tablespoon peanut butter into the melted chocolate for a softer, peanut-flavored topping.

Crunchy Peanut: Substitute crunchy peanut butter for creamy, or fold ¼ cup chopped roasted peanuts into the cereal mixture.

Sunflower Butter: Replace the peanut butter with a thick, no-stir sunflower seed butter. The flavor and firmness will differ slightly.

Mini Cups: Use a mini muffin pan and divide the mixture into approximately 30–36 smaller cups.

Storage

Store the cups in an airtight container in the refrigerator for up to 1 week.

Place parchment paper between layers to prevent the chocolate tops from sticking together.

Keep the cups chilled until shortly before serving, especially in warm weather.

For longer storage, freeze in a sealed freezer-safe container for up to 2 months.

Thaw frozen cups in the refrigerator, then let stand at room temperature for 5–10 minutes before enjoying.
