Ingredients
This Sweet and Salty Pecan Cracker Mix combines crunchy cheese crackers, toasted pecans, and a buttery brown sugar glaze. It makes approximately 7 cups.
Measure 5 cups small square cheese crackers, such as Cheez-Its.
Add 2 cups pecan halves. Use fresh pecans for the best flavor.
You’ll need ½ cup unsalted butter, cut into pieces.
Measure ¾ cup packed light brown sugar for the caramel-style coating.
Prepare ¼ cup light corn syrup, which helps the glaze coat the crackers evenly.
Measure 1 teaspoon vanilla extract and ½ teaspoon baking soda, keeping them separate.
Optional: prepare ¼ teaspoon cayenne pepper for heat and ¼ teaspoon flaky salt for finishing.
Instructions
Preheat your oven to 250°F (120°C). Line two large rimmed baking sheets with parchment paper.
Place the cheese crackers and pecan halves in a large heatproof mixing bowl.
Gently toss them together, distributing the pecans throughout the crackers.
Combine the butter, brown sugar, and corn syrup in a medium saucepan.
Warm over medium heat, stirring until the butter melts and the sugar mixture becomes smooth.
Bring the mixture to a steady boil. Once boiling, cook for 2 minutes, stirring gently.
Remove the saucepan from the heat before adding the remaining ingredients.
Stir in the vanilla and optional cayenne pepper.
Add the baking soda and stir carefully. The mixture will foam and become lighter.
Immediately pour the hot glaze over the crackers and pecans, avoiding contact with the hot sugar.
Fold gently with a heatproof spatula until the mixture is evenly coated.
Divide between the prepared baking sheets and spread into shallow, even layers.
Bake for 45–60 minutes, gently stirring every 15 minutes and rotating the trays halfway through.
Begin checking at 45 minutes. The coating should look set and become crisp when a small cooled sample is tested.
Remove from the oven and sprinkle with the optional flaky salt while the coating is warm.
Let cool completely on the baking sheets, approximately 30–45 minutes. The coating will firm as it cools.
Break apart any clusters and transfer to a serving bowl.
Variation
Spicy Mix: Add ½ teaspoon cayenne pepper instead of ¼ teaspoon for a stronger sweet-and-spicy flavor.
Cinnamon Pecan: Stir 1 teaspoon ground cinnamon into the glaze after removing it from the heat.
Mixed Nuts: Replace half the pecans with unsalted almonds or cashews.
Pretzel Crunch: Replace 1 cup cheese crackers with 1 cup mini pretzels, keeping the total quantity the same.
Less Salty: Choose reduced-sodium cheese crackers and omit the optional flaky salt.
Storage
Allow the mix to cool completely before storing so trapped steam does not soften the crackers.
Keep in an airtight container at cool room temperature for up to 1 week for the best crunch.
Store away from direct sunlight, heat, and humidity.
If the mix softens slightly, spread it on a baking sheet and warm at 250°F (120°C) for 10–15 minutes. Cool completely before serving.
For longer storage, freeze in an airtight freezer container for up to 2 months. Thaw with the container sealed before opening.
