3-Ingredient Chocolate Peanut Butter Cracker Cookies

Ingredients

48 round buttery crackers: Choose evenly sized crackers so the sandwiches fit together neatly.

¾ cup creamy peanut butter: A regular, no-stir peanut butter makes a firm filling that stays in place.

16 ounces (454 g) chocolate candy coating: Use milk chocolate or dark chocolate flavored melting wafers.

Instructions

Line two baking sheets with parchment paper or wax paper.

Check the crackers and set aside any broken ones. You need 48 whole crackers for 24 sandwiches.

Arrange 24 crackers on one prepared baking sheet, with their flat sides facing upward.

Stir the peanut butter until smooth and easy to spread.

Place approximately 1½ teaspoons of peanut butter in the center of each cracker.

Spread the filling evenly, leaving a small border around the edges.

Top each filled cracker with another cracker, keeping the flat side against the peanut butter.

Press gently to secure the sandwiches without cracking them or squeezing out the filling.

Refrigerate the assembled sandwiches for 15–20 minutes to firm up the peanut butter.

Place the chocolate candy coating in a clean, completely dry microwave-safe bowl.

Microwave according to the package directions, using short intervals and stirring frequently.

Stop heating when only a few small pieces remain. Stir until the remaining pieces melt.

Keep water and steam away from the coating, since moisture can make it seize.

Remove a few chilled cracker sandwiches from the refrigerator at a time.

Lower one sandwich into the melted coating and turn gently to cover both sides.

Lift it out with a fork, allowing excess coating to drip back into the bowl.

Tap the fork lightly against the bowl’s edge to create a thinner, more even coating.

Slide the coated sandwich onto the parchment using a second fork or toothpick.

Repeat with the remaining sandwiches, leaving a little space between them.

If the coating thickens, briefly rewarm it according to the package directions.

Let the cookies stand until the coating is firm, usually 30–60 minutes depending on room temperature.

For faster setting, refrigerate the tray for 10–15 minutes, just until the coating hardens.

Trim away any excess chocolate around the bottoms once the cookies have set.

Serve when firm, or pack into small containers with parchment between the layers.

Variation

Dark Chocolate: Use dark chocolate flavored melting wafers for a less sweet coating.

White Chocolate: Replace the milk chocolate coating with white melting wafers for a sweeter version.

Crunchy Peanut Butter: Substitute crunchy peanut butter for extra texture, spreading carefully to avoid breaking the crackers.

Optional Finishes: Add sprinkles, chopped peanuts, or a tiny pinch of flaky salt while the coating is still wet.

Storage

Allow the coating to harden completely before storing so the cookies do not stick together.

Keep in an airtight container in a cool, dry place for up to 1 week, separating layers with parchment paper.

If your kitchen is warm, refrigerate in a sealed container for up to 2 weeks. Let the closed container warm slightly before opening to reduce condensation.

Freeze in an airtight freezer container for up to 2 months. Thaw inside the closed container before serving.
