Crispy Onion Fritters (Golden Bhaji-Style Bites With Herb Dip)

Ingredients

1. Use 2 large yellow onions, peeled and very thinly sliced. Separate the slices into strands for crisp, delicate edges.

2. Measure 1 cup chickpea flour, also called besan. This forms the savory coating that holds the onions together.

3. Add 2 tablespoons rice flour to help the fritters develop a lighter, crispier crust.

4. Prepare 1 teaspoon ground cumin, ½ teaspoon ground coriander, and ¼ teaspoon turmeric.

5. Measure ¾ teaspoon salt and ¼ teaspoon ground black pepper.

6. Chop enough fresh cilantro to make 2 tablespoons for the fritter mixture.

7. Have ¼–½ cup water ready. You may need less depending on how much moisture the onions release.

8. Use a neutral frying oil, such as canola or sunflower oil. You will need enough for approximately 1½ inches in your pan.

9. For the dip, measure ¾ cup plain Greek yogurt, 1 tablespoon lemon juice, and 1 small garlic clove, finely grated.

10. Finish the dip with 1 tablespoon chopped parsley, 1 tablespoon chopped chives, and salt and pepper to taste.

Instructions

11. Stir the yogurt, lemon juice, garlic, parsley, and chives together in a small bowl. Season to taste and refrigerate until serving.

12. Place the sliced onions in a large mixing bowl. Sprinkle with the measured ¾ teaspoon salt.

13. Gently scrunch the onions with clean hands for about 1 minute. Let them stand for 10 minutes to soften and release moisture.

14. In a separate bowl, whisk together the chickpea flour, rice flour, cumin, coriander, turmeric, and black pepper.

15. Sprinkle the dry mixture over the onions. Add the cilantro and toss until the onion strands are evenly coated.

16. Add water 1 tablespoon at a time, mixing thoroughly after each addition. Stop as soon as the mixture becomes sticky enough to hold together.

17. Check the consistency before frying. The batter should cling to the onions without collecting as a thin liquid at the bottom.

18. Pour approximately 1½ inches of oil into a heavy, deep saucepan, keeping the pan no more than half full.

19. Heat the oil to 350°F (175°C). Use a frying thermometer to monitor the temperature throughout cooking.

20. Scoop a heaping tablespoon of the onion mixture. Form a loose, slightly flattened cluster without squeezing it into a dense ball.

21. Carefully lower the cluster into the oil using a spoon. Add a few more, leaving space between them.

22. Fry for 4–6 minutes, turning occasionally, until the fritters are deeply golden and the onion centers are tender.

23. Maintain the oil around 340–350°F (170–175°C). Allow it to return to temperature between batches.

24. Transfer the cooked fritters to a wire rack set over a baking sheet. Keep them in a single layer so steam can escape.

25. Continue frying the remaining mixture in small batches. Serve hot with the chilled herb dip for the best texture.

Variation

26. For spicy onion fritters, add ¼ teaspoon cayenne pepper or 1 finely chopped green chili to the batter.

27. For a ginger variation, mix in 1 teaspoon freshly grated ginger with the onions before adding the flour.

28. For a different herb flavor, replace the cilantro with an equal amount of chopped parsley.

29. For extra spice texture, replace the ground cumin with 1 teaspoon cumin seeds. They add small bursts of warm flavor.

30. For a dairy-free dip, replace the Greek yogurt with thick, unsweetened plant-based yogurt. Keep the remaining dip ingredients the same.

Storage

31. Cool leftover fritters in a single layer on a rack. Refrigerate within 2 hours of cooking.

32. Store the cooled fritters in an airtight container in the refrigerator for up to 3–4 days. Refrigerate the herb dip separately and use within 3–4 days.

33. Reheat fritters on a rack over a baking sheet at 375°F (190°C) for approximately 8–12 minutes, until hot throughout and crisp.

34. To freeze, arrange cooled fritters on a lined tray until firm, then transfer to a freezer-safe container. Use within 2 months for the best quality.

35. Reheat frozen fritters at 375°F (190°C) for approximately 15–20 minutes, until hot throughout. Avoid microwaving when possible, as it softens the crisp coating.
