Creamy Mushroom Beef Stew is the kind of comforting meal that fills the kitchen with an irresistible aroma while it slowly cooks. Tender pieces of beef are combined with creamy mushroom soup, savory onion seasoning, and beef broth to create a rich and flavorful gravy.
One of the best things about this recipe is how easy it is to prepare. There is no complicated cooking technique required, and you do not need to spend a long time standing over the stove. Most of the cooking happens slowly in the oven.
To begin, preheat your oven to 300°F (150°C). Lightly spray a 9×13-inch or approximately 2-quart baking dish with nonstick cooking spray. This will make serving and cleanup easier.
For the main ingredient, use 2 pounds (900 g) of beef stew meat. Cut the beef into approximately 1-inch bite-sized cubes so that the pieces cook evenly and become tender during the long cooking process.
Place the raw beef cubes directly into the prepared baking dish. Spread them into an even layer so that the pieces have enough room to cook in the flavorful liquid and gravy.
Next, sprinkle one 1-ounce (28 g) packet of dry onion soup mix evenly over the beef. The seasoning adds a deep savory flavor to the stew and helps create the delicious gravy.
If you do not have onion soup mix, you can use one medium finely diced onion combined with about 1 teaspoon of beef bouillon powder. This provides a simple alternative while still giving the dish plenty of savory flavor.
Pour ½ cup of low-sodium beef broth over the beef and onion seasoning. The broth provides moisture and helps create the sauce as the stew slowly cooks in the covered dish.
For additional flavor, the beef broth can be replaced with dry red wine or, for a sweeter variation, ginger ale. These alternatives can add a different layer of flavor to the finished gravy.
Now add one 10.5-ounce (298 g) can of condensed cream of mushroom soup. Do not dilute the soup with water. Spoon it over the beef and spread it around with a spatula so that the meat is lightly coated.
Once all the ingredients are in the dish, cover it tightly with heavy-duty aluminum foil. Creating a good seal is important because the trapped steam helps cook the beef gently and prevents the meat from drying out.
Place the covered baking dish in the preheated oven. Bake the beef slowly for approximately 2½ to 3 hours. The low temperature and long cooking time allow the connective tissue in the beef to break down gradually.
After about 2½ hours, carefully check the beef for tenderness. The pieces should be very soft and easy to pierce with a fork. If they are still firm, cover the dish again and continue cooking until tender.
When the beef is finished, carefully remove the aluminum foil because hot steam will escape. Stir the beef and creamy mushroom gravy together, making sure the sauce is evenly distributed throughout the dish.
Allow the stew to rest for about 5 minutes before serving. This short resting period gives the gravy a chance to thicken slightly and allows the flavors to come together.
For serving, spoon the creamy beef and mushroom mixture generously over buttered egg noodles, creamy garlic mashed potatoes, or steamed white rice. The gravy pairs especially well with foods that can absorb the rich sauce.
You can also serve the stew with vegetables such as roasted green beans, steamed broccoli, or a crisp garden salad. These sides provide a fresh contrast to the creamy richness of the beef.
Warm crusty dinner rolls or garlic bread are another excellent accompaniment. They are perfect for soaking up any extra mushroom gravy left on the plate.
Keep in mind that both onion soup mix and condensed mushroom soup can contain a significant amount of sodium. Using low-sodium beef broth and, when available, low-sodium soup can help you control the salt level. Freshly cracked black pepper and chopped parsley can be added at the end for extra flavor and freshness.
This recipe can also be prepared in a slow cooker. Combine the beef, mushroom soup, onion soup mix, and broth in a 4- to 6-quart slow cooker, then cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours. Whether prepared in the oven or slow cooker, the result is a rich, tender, comforting beef stew that is perfect for a satisfying family dinner.
