Delicious Lemon Cherry Cookies

These Cherry Jam Cookies are a delightful treat that combines a buttery cookie base with a sweet cherry jam filling, topped with a zesty lemon frosting.

INGREDIENTS:

One cup of room-temperature butter
Half a cup of sugar
Two large eggs.


One tiny dollop of vanilla flavor
Three-quarters of a cup of all-purpose flour
One little dollop of baking soda
Baking powder, half a teaspoon.

Half a teaspoon of salt
One cup of cherry jam
Two cups of powdered sugar.


2 to 3 tablespoons of lemon juice
One lemon’s grated peel
Food coloring in yellow (if desired).

INSTRUCTIONS:

Before using, preheat the oven to 350°F (175°C). Use parchment paper to cover baking sheets.


Combine the sugar and butter in a large bowl and beat until frothy and light.
Add the vanilla extract after cracking each egg individually.

Combine the flour, baking powder, and baking soda in a separate bowl, and salt.

Mix the liquid ingredients with the powdered ingredients gradually until they are thoroughly blended.
