Picture yourself lounging on a sun-soaked beach with the gentle breeze rustling through the palm trees, as you savor each bite of this irresistible recipe.
Last summer, my friends and I embarked on a beach getaway to celebrate the end of a long and stressful year.
We were in desperate need of relaxation, adventure, and, of course, good food.
One evening, as the sun was setting, we gathered around a rustic wooden table under a thatched-roof terrace overlooking the ocean.
The tantalizing scent of slow-cooked pork and the tropical flavors of pineapple wafted through the air, making our stomachs rumble.
With eager anticipation, we served ourselves heaping portions of juicy pork bathed in a sticky and luscious pineapple glaze.
The first bite was pure bliss – a divine combination of flavors that took us straight to food paradise.
From that moment on, this recipe became our ultimate beach vacation tradition, evoking memories of laughter and joy with every bite.
Recipe: Slow Cooker Pineapple Pork
Slow Cooker Pineapple Pork
Ingredients:
2-3 lb pork loin roast
1 sliced onion
2 tbsp extra virgin olive oil.
½ cup dark brown sugar
¾ cup apple cider vinegar
½ cup honey.
¼ cup soy sauce
2 tsp salt
3 minced garlic cloves.
2 cups diced fresh pineapple chunks
Optional: 1 tsp crushed red pepper flakes.
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
Add the pork loin roast and sear it on all sides until browned. This will help seal in the flavors and juices.
2. Transfer the seared pork loin roast to a slow cooker. Add the sliced onion around the roast. (If you want, you can also sear the onions before putting it in).
3. In a mixing bowl, combine the apple cider vinegar, soy sauce, honey, dark brown sugar, minced garlic cloves, salt, and crushed red pepper flakes (if using). Mix well to create a marinade.
4. Pour the marinade over the pork loin roast and onions in the slow cooker. Make sure the roast is well coated with the marinade.
5. Add the diced fresh pineapple chunks to the slow cooker, distributing them evenly around the roast.
6. Cover the slow cooker and cook on low heat for 6-8 hours or high for 4-5 hours, or until the pork is tender.
7. Optional: Once done, make a cornstarch slurry and pour into slow cooker to further thicken gravy sauce.
Once done, you can serve as-is with thicken gravy sauce, or serve shredded (and make sandwiches).
So, why wait for a beach vacation to indulge in the tropical symphony of flavors?
Save and make this Slow Cooker Pineapple Pork recipe, and let it bring a taste of paradise to your home.
For a delicious twist on this pineapple honey garlic pork loin, you can experiment with different fruits like mango, peach, or even canned pineapple if fresh isn’t available.
Add a splash of orange juice or swap the soy sauce with coconut aminos for a lighter flavor.
For those who enjoy a little heat, crushed red pepper flakes or a dash of sriracha can give the sauce a spicy kick.
You can also mix in fresh herbs like thyme or rosemary for an aromatic touch.
To store leftovers, let the pork cool completely, then transfer it with the sauce to an airtight container.
It will keep in the refrigerator for up to 4 days or in the freezer for up to 3 months.
Reheat gently on the stove or in the microwave, adding a splash of broth or water if the sauce thickens too much.
